How is the beef priced?
Pricing for beef purchases are based on the rail weight of the individual calf you are purchasing and your processing options. The rail weight is typically between 50-65% of the live weight. The rail weight will be determined at the processor and will be the basis for the purchase price. We will let you know the rail weight as soon as the processor relays that information on to us. Our goal is to raise the calf to between 550-650 lb (live weight). This would result in a rail weight of 330-390 lb (assuming 60% rail to live weight ratio). How does the butcher know how I want my beef processed?
When ordering, we will go over a cut sheet with you to guide the butcher. The butcher will follow these instructions as closely as possible. Each animal is different and the butcher will make necessary cutting and processing decisions at his/her discretion.
Who processes the meat?
We use Titus County Meat Processing Plant to custom process our beef.
Do I have to purchase an entire calf?
No, you can either spilt the calf with friends, or you can contact us to help you find someone in a similar situation.
Can I purchase beef now?
We want the beef you purchase to be fresh and processed exactly how you desire. It is also important for us to finish the calves out to the proper weight. To do this, we have to wait for the right time. We have calves ready at various times throughout the year. To check availability, please contact us by email, phone, or Facebook message.
How much freezer space do I need?
On average, 1 cubic foot of freezer space is needed for 35 pounds of packaged meat. 220 pounds of packaged meat would need approximately 6.5 cubic feet of freezer space.
How much meat can I expect from one calf?
