Pricing and how to order?
Thank you for considering purchasing our locally grown, grass-fed beef! At Rise Up Timber, Land, and Cattle, we take pride in raising high-quality animals and providing excellent beef to our customers.
Our pricing is based on the rail weight (or hanging weight) of the individual calf you are purchasing and your processing options. The rail weight typically ranges between 50-65% of the live weight, and is determined by the processor. We sell the whole calf at $4.98/lb and half a calf at $5.33/lb, based on the rail weight, and pass through the processing fees. Once the processor relays the rail weight information to us, we will let you know the exact price. The processing fees consists of a base fee of $75 plus an additional $1.10 per pound of rail weight (with a minimum total processing fee of $500). Any additional requests for dry aging (10 days of dry aging included) or custom processing options may result in increased processing costs. We want to make sure that you get exactly what you want, so we are happy to work with the processor to ensure that your beef is prepared to your liking. We aim to raise our calves to be between 550-650 lb (live weight), resulting in a rail weight of 330-390 lb (assuming 60% rail to live weight ratio). Once the processor relays the rail weight information to us, we will let you know the exact price. To secure your order, we require a deposit of $500 for a half calf and $1000 for a whole calf. Please note that orders must be picked up at the processor. The processor we use is the Titus County Meat Processing Plant and is located just north of Mount Pleasant.

Example Scenario:
A live, 650 lb, grass-fed steer is taken to the processor.
The rail weight is 390 lb (assuming 60% of the live weight).
The packaged weight is 273 lb (assuming 70% of the rail weight).
For the whole animal, with no special processing options your cost would be:
390 lb x $4.98/lb + 390 lb x $1.10/lb + $75 = $2,446.20.
This equates to $8.96/lb of packaged beautiful, tasty grass fed beef. By comparison, Brookshire’s offers ground grass-fed beef for $8.99/lb. Keep in mind in addition to ground meat, you'll also receive premium steak cuts, brisket, etc. at this low price! You also get the added health benefits, and peace of mind knowing exactly where your beef comes from, and that you’ve supported a local business.
